What I Ate: June 17, 2009

Dinner: I made pork chops. I still don't have grill (don't plan on buying my grills until after we move again in October) so I used a grill pan and cooked on the stove. I also had some bread from Sunday that I sliced and made into seasoned crostini. Then I put sliced zucchini on the grill pan and seasoned with salt and pepper. I then served all of it with peeled and pitted apricots.

Grilled Pork Chops
2 tsp. dried rosemary
2 tsp. dried thyme
2 tsp. applewood smoked salt
1 Tbs. extra virgin olive oil
I brined two Berkshire pork rib chops for forty minutes in a brining solution of approx. 2 quarts water and 1/4 cup salt.
I dried the rib chops. I then toasted the rosemary and thyme and crushed it with a mortar and pestle.
I sprinkled one side of the chop with applewood smoked salt and the other side with the rosemary and thyme.
I placed the chops herbed side down on a hot grill pan with extra virgin olive oil and kept it there for 3 minutes to form a crust.
Then I flipped it over and cooked the other side until the inside hit 140°F - about 2 minutes.

Lunch: We had leftovers - fried rice, dandelion greens, and mapo doufu.

Tina cooked aloo gobi (potatoes and cauliflower). It was pretty good. Man, turmeric really stains stuff… can't seem to get it out of anything it gets on.

  • Apparently sunlight will get turmeric stains out - I guess it depends on what's stained.

  • Hmmm… anything else work? What if it's on the counter or the oven handle?
