Lunch: We heated up a couple slices of the leftover Tuna Noodle Casserole before heading off to the Long Center for a Texas Christmas Carol (a holiday variety performance).

Dinner: I grilled chanterelle mushrooms over indirect heat and served it with ostrich meat bacon cheeseburgers.

  • hey michael,
Your turkey roasting instructions helped me tremendously over Thanksgiving. I didn't know about the breast down position for a juicier turkey. Thanks to you had a very moist turkey!

ps. We LOVE ostrich meat, but in Chicago, not available in stores or restaurants-just online and $$$! Where do you get yours?

  • I'm lucky enough to be able to buy it in the frozen meats section of my local supermarket (HEB - a popular Texas chain).

  • Texas is actually where a lot of people raise ostriches. Emus, as well. I'd imagine it's quite easy to find emu meat in TX as it's fairly easy to find in Wisconsin, where emus are also raised in pretty decent numbers. Emu meat is similar to ostrich in that it's red meat, higher in protein than beef, but lower in both fat, calories and cholesterol than beef, but only very slightly higher than ostrich. (my family used to raise emus. :-p )
